Biper Gorri is a family-owned company of farmers that has been growing and processing Espelette peppers in the French Basque Country since 2011. Brothers Mati and Xavi Castanchoa produce a preservative-free 100% natural product entirely from organic farming.
To ensure optimal preservation, it was essential that the packaging process was carried out under vacuum in a dry environment. These were their packaging needs, and the new range of Oxyneg® cappers was a perfect fit. Products such as nuts, honey and pâté also require dry packaging, as their handling and properties are incompatible with steam.
A paradigm shift
The Oxyneg® range does not require steam for vacuuming and, for the first time in history, allows two of the most important values in the world of glass packaging to be preset: the jar’s seal and the vacuum parameters can be adapted precisely to each format and product.
Preserving product qualities
Biper Gorri is covered by Protected Designation of Origin Piment d’Espelette, which guarantees consumers will enjoy an outstanding quality product, with full control over the entire process, from cultivation and manual harvesting, through to drying and grinding, always achieving exceptional organoleptic properties. The OX/3 capper maintains all these properties intact until consumers open the jar in their kitchen.
The OX/3 machine can automatically package up to 2200 jars per hour, freeing up time for other tasks, as Xavi Castanchoa told us during our visit to their facilities.
The advantages of high vacuum
High-vacuum canning ensures higher quality products, better safety and fewer preservatives, as studies carried out at the CNTA (National Centre for Food Technology and Safety) and the Basque Culinary Centre have demonstrated.
At Ayrtac Technology Centre, we are already working on improving performance for this range of Oxyneg® cappers in order to meet high production rates.
